Tacos are a great child and adult project as they are more assembly than cooking. Your child can help with cooking out the mince and preparing the salad, cheese and salsa as you see fit and safe.

Ingredients:
1 onion
2 peppers - your choice of colours
olive oil
2 garlic cloves
1 pinch of paprika
1½ teaspoons cumin
250 ml beef stock
12 corn taco shells
Salsa
2 ripe tomatoes
1 spring onion
3 sprigs of fresh coriander
½ a lime
Method:
You can prepare the ingredients into separate bowls (TV chef style), then it is easier for your child to add the ingredients to the pan while you supervise and hold up safety in the kitchen.
Heat some oil in the pan to a medium heat. Peel and chop the onion, then deseed and slice the peppers. Soften the vegetables in the pan over a low heat.
Add the paprika and cumin to the pan, and then crush the garlic into the pan, and cook for 1 to 2 minutes.
Add the beef into the pan and stir until it has browned.
Pour in the stock, cover, and cook for 45 minutes, or until reduced and delicious.
Preheat the oven to 180ºC/350ºF/gas 4. Once warmed, spread the taco shells out on a baking tray and place in the oven for 3 to 4 minutes until warm and crisp.
For the salsa, chop the tomatoes, trim and finely slice the spring onion, then pick and roughly chop the coriander leaves. Combine with the lime juice, then season with salt and pepper.
Assemble the toppings into bowls (cheese, salad, salsa and beef mince) and allow the table to help themselves to construct their own tacos for dinner!
