Corona-Lime Chicken Skewers.

We added a little Corona in honour of international beer day - with the lime it makes for a light zesty flavour, and the marinade is reduced on the hob for a delicious sauce to serve over the top of the chicken.
We added some onion and courgette to our skewers to help keep the meat in place! Using metal skewers also helps to ensure the middle of the meat is cooked. Be sure not to cook the meat for too long as it will dry out.
It’s a quick, healthy dish that’s ideal for using our chicken breasts from the healthy lean meat pack.
This recipe serves 2 as a main or more if part of a range of options at a BBQ.
Ingredients:
500g boneless chicken thighs or breasts, cut into chunks
Half bottle of Corona (cook can drink the rest!)
Juice of 1 lime
Zest of 1 lime
1 tbsp olive oil
2 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
Salt & pepper to taste
Optional: chopped coriander for garnish

Method
Marinate: In a bowl, mix Corona, lime juice & zest, olive oil, garlic, cumin, paprika, salt, and pepper. Add chicken and marinate for at least 30 mins (up to 4 hours).
Skewer: Thread chicken onto skewers. If using wooden ones, soak them first.
Grill or Air-Fry: Cook over medium-high heat for 10–12 mins, turning occasionally until golden and cooked through.
Sauce: while the chicken is cooking add your left over marinade to a pan and out on the hob to reduce down to a thick sauce - Bring to a rolling boil for at least 5 minutes to kill any bacteria, then simmer until thickness of sauce you desire is reached.
Serve: Sprinkle with fresh coriander and serve with rice, grilled veg, or a slaw.
