CHICKEN MEATBALLS

(Serves 2-3)


Trying to eat healthily?

These chicken meatballs are a leaner alternative to beef and pork, and we have to say these are the BEST chicken meatballs you'll ever eat!!!


You can get minced chicken in our Healthy Lean Pack OR we can mince chicken for you in-store (minimum 1kg).


Ingredients

MEATBALLS:

  • 4 slices bread blitzed to crumbs

  • 500g Chicken mince

  • Salt & Pepper

  • 1 egg

  • 3 crushed cloves garlic

  • 30g chopped sultanas/raisins (weird, but trust us!)

  • 30g grated parmesan

  • any addition of herbs you fancy (we used 1tsp basil)

SAUCE:

  • 1 tbsp olive oil

  • 1 diced onion

  • 1 clove garlic crushed

  • 1/2 tsp sugar

  • Salt & Pepper

  • Tin chopped tomatoes

  • 1 tbsp Tomato puree

Method

MEATBALLS:

  1. Tear/chop/blitz breadcrumbs, put into a bowl then grate the onion on top. Mix well - there should be enough moisture from the onion to hydrate the bread - if not add a drop of water. leave to rest for 10minutes. Then add one third the meat, salt, pepper, egg & garlic. Mix thoroughly then add the rest of the meat, sultanas, parmesan and any herbs. Mix well but try not to overwork.

  2. Turn the grill up to medium/high and grill on both sides until cooked through OR cook in an air fryer 180C, 6-8minutes on each side.

SAUCE:

  1. Fry the onion in the olive oil with the salt until lightly brown, then add the tomato puree and cook-out for half a minute or so.

  2. Add chopped tomatoes and cover with a lid. Season with pepper and sugar then leave to simmer until you have a lovely thick sauce.

  3. Drop the meatballs into the sauce to warm then serve as we did with pasta, salad or in a french stick!
