Two chicken breasts
1/2 red onion
1 green pepper
1 red chilli (omit if you don't like chilli, or increase if you do!)
A squeeze of lemon juice
1 stock cube
1/2 tin chopped tomatoes
Salt & pepper
1tbsp olive oil
Rice/green vegetables to serve
Slice the chicken lengthways into small strips.
In a large frying pan or wok heat a drizzle of oil and fry the chicken off, setting aside when done.
Slice your onion and pepper into strips, heat some more oil in the pan and fry until softened.
Mix 100ml boiling water with a stock cube, add the chicken back to the pan & pour the dissolved stock over. Add 200g chopped tomatoes & the paprika, stir well and cook for 8 minutes.
Turning your heat down, add the cream, stir through. Add the lemon juice, again string through for 2-3 minutes.
Serve with rice and green veg as you wish!
