Rush Green Sausage & Chicken Paella

A hearty twist on a Spanish classic using locally sourced meat and homemade stock (or just use shop bought if you don't have homemade!)
(Serves 4)
Ingredients:
2 Rush Green sausages, sliced
2 chicken breasts, diced
1 onion, finely chopped
1 yellow pepper, sliced
2 garlic cloves, minced
1 tsp smoked paprika
Pinch of saffron (optional)
300g paella rice
750ml rich chicken stock (homemade & reduced)
Olive oil
Salt & pepper to taste
Fresh parsley & lemon wedges to serve

Method
Brown the meat Heat olive oil in a wide pan. Add sausage and chicken, season lightly, and cook until golden. Remove and set aside.
Sauté the veg In the same pan, cook onion and yellow pepper until soft. Stir in garlic and paprika.
Toast the rice Add rice and stir for 1–2 minutes to coat in flavour.
Add stock & saffron Pour in the chicken stock and saffron. Stir once, then simmer gently without stirring.
Return the meat After 10 minutes, nestle sausage and chicken back into the pan. Simmer for another 10–15 minutes until rice is tender and liquid absorbed.
Rest & serve Cover with a clean tea towel and let rest for 5 minutes. Garnish with parsley and lemon wedges.
Tip: Use your homemade stock for deeper flavour—it’s the secret weapon in this dish!
